Drying vegetables includes the following processes – pre-treating vegetables, water blanching, steam blanching, cooling and drying the prepared vegetables, and determining the dryness of the vegetables. Vegetables are not recommended to be dried under the sun due to the lower acid content when compared to fruits. This is why the vegetables are dried until they are brittle. At the final stages of sir drying, the vegetables will only contain 10% moisture, which allows the process of microorganism growth.
