Monosodium Glutamate (MSG), also known as sodium glutamate or umami seasoning, is a popular food flavour enhancer/ seasoning that provides a delicious taste to food. It is the sodium salt of glutamic acid, a non-essential amino acid found in many foods like meat, fish, vegetables and cheese. MSG has been an ingredient included in controversy because of concerns about its potential side effects about being harmful to health but the Joint FAO/WHO Expert Committee on Food Additives (JECFA), Food and Drug Administration (FDA), and the European Food Safety Authority (EFSA) have proven the safety of consumption of MSG with the recommended Acceptable Daily Intake (ADI), which is 30mg/kg of body weight per day of a person.

MSG is a common ingredient used by various cuisines worldwide to enhance the flavour of their food. It is also known as ‘Umami’ and is a common amino acid found in many foods like meat, fish, vegetables and dairy products. Due to the common use of MSG in many Asian cuisines, it is expected for the market to grow at a faster pace.
