The production of potatoes was the highest in 2018 reaching 48,22,267 metric tons. There was an increase of 5.95% between 2014 and 2019 in the production of potatoes used specifically for processed items such as French fries, chips, hash browns, and mashed potato dishes. Potatoes used for processing have shown a consistent increase between these years. 3.03 million metric tons of potatoes used for processing were produced in 2019. Mashed potatoes and French fries were the most popular types of processed products. According to Statistics Canada, Global Trade Atlas & Post Estimates, production of frozen potato products which include mashed potatoes, potato cakes, French fries, etc. increased from 11,18,610 metric tons in 2014 to 11,85,300 metric tons in 2019. Similarly, there was an increase in the import of frozen potato products from 41,735 metric tons in 2014 to 51,000 metric tons in 2019.
